I'm not an expert sewer yet, but I'm good at puzzles. There might be a lot of hand sewing in your future if I'm correct in my way of thinking. I don't know the proper sewing terms, but here goes....I think the bottom of the pleats (the valley) should be anchored to the foundation from the wrong side leaving the top (the hill) free and rounded, and most likely standing straight up, then you can "push" them in the direction you want when you lay them down to sew the seems and maybe hit them with a lil steam.
